What operating system do I need to use Apple Pay?

You need the latest version of iOS, iPadOS, watchOS or macOS.

If you are not sure if you have the latest version, just go to Settings on your device and see if there is a software update notification. If there is no notification of a software update, then you have the latest version.

You also need to have the latest or second most recent version of the Eurocard app to add your card to Apple Pay using the app.
